Faculty of Science, Khon Kaen University and Department of Science Service, Ministry of Science and Technology cooperates in upgrading community standard products (OTOP) of foods and soft drinks towards the world kitchen

Faculty of Science, Khon Kaen University joins with Department of Science Service, Ministry of Science and Technology to carry out a project to enhance potentials of food and soft drink OTOP entrepreneurs according to the good manufacturing principles. The participating entrepreneurs are from areas in the Northeast, including Kalasin, Mahasarakham, Nong Bualamphu, and Udonthani. These entrepreneurs, who have already been certified of the initial standard from the Food and Drug Administration, will receive quality development towards Community Product Standard. Department of Microbiology, Faculty of Science, Khon Kaen University forms the project consultant team and runs the workshop, examines and analyzes the products at the international standard laboratory guaranteed with ISO/IEC 17025. The team also transfers academic technology, provides in-depth consultation in order to adjust and develop the product quality according to Community Product Standard. Participants or trainees are encouraged to apply scientific knowledge to develop products for their communities. The project responds to: the Ministry of Science’s policy in terms of service, Khon Kaen University’s policy in terms of academic service, the nation’s target of Thai Kitchen towards the World Kitchen, and Thailand 4.0.

 

         On April 20, 2017 at 8.30 a.m. at Avani Khon Kaen Hotel and Convention Center, the opening ceremony of the project was held, and the host was honored by Dr. Sutthiwet Sangchan, Director of Department of Science Service, Ministry of Science and Technology, who conveyed an opening address; Professor Dr. Supachai Pathumnakul, Vice President for Research and Technology Transfer, who conveyed a welcoming speech; and Asst. Prof. Dr. Somkiat Srijaranai, Dean of Faculty of Science who made a reporting speech. About 100 attendants including administrators, lecturers, researchers and food manufacturers from Kalasin, Mahasarakham, Nong Bualamphu, and Udonthani. In the event, the participating entrepreneurs brought over 20 types of OTOP products to demonstrate including fermented fish paste, fermented fish in coconut milk, Isan sausages, pork and beef mam sausages, sour pork and beef sausages, assorted kinds of peanuts and cashew nut products and assorted kinds of fried bananas.

 

         Dr. Sutthiwet Sangchan, Director of Department of Science Service, Ministry of Science and Technology said that the government has a policy to drive Thailand to the world kitchen and develop Thailand towards Thailand 4.0 by strengthening competitive ability of Thailand which is a national strategy. Department of Science Service, Ministry of Science and Technology has a mission to promote the use of manufacturing science and technology in OTOP, SMEs, and industry to develop and upgrade community products that will lead to their competitive ability in terms of trade and consumers’ safety. This project that upgrades food and soft drink product quality in the Northeast including Kalasin, Mahasarakham, Nong Bualamphu, and Udonthani is therefore implemented with Khon Kaen University’s collaboration to develop products according to Community Product Standard.

 

        Professor Dr. Supachai Pathumnakul, Vice President for Research and Technology Transfer added that the team from Department of Microbiology, Faculty of Science, Khon Kaen University, the assigned project consultant is co-working on this project because it is one of the mission of Khon Kaen University to provide services to the community. Besides, Khon Kaen University has supported development of a laboratory for microbiological examining for ISO/IEC 17025 international certification. Therefore, the team is ready to provide services to governmental and private organizations that aim to develop product qualities such as for foods or soft drinks to meet the required standards. The results from laboratory analysis could be used for development of manufacturing processes to manufacture standard foods and soft drinks, which will also be encouraged to apply for standard certification. This is considered a complete cycle of quality development for food and soft drink manufacturing. At the same time, manufacturers will also be strengthened in terms of capability to compete with other countries’ products. Thai food will step forward to become the world food or world kitchen. In addition, there will be collaboration among government organizations to achieve the mission of service providing as well as integration of research and academic services from research studies that truly meet community’s and people’s needs.
